Dates and coconut squares

Ingredients

  • 2 1/2 cups of pitted cedar dates cut in half
  • 1/2 tsp vanilla extract
  • 2/3 cup grated unsweetened coconut
  • 1 1/2 cups all-purpose flour
  • 1 cup softened butter
  • 1 cup brown sugar
  • 1 cup quick-cooking oatmeal
  • 1/2 cup large flake oatmeal
  • 1 tsp baking powder

Preparation

  1. Preheat oven to 180 C.
  2. In a saucepan, mix the dates with the vanilla and 1 cup of boiling water. Cook over low heat, and let it simmer for 8 to 10 minutes, stir occasionally. Remove from heat and let cool.
  3. Set aside 1/4 cup of coconut. In a large bowl, mix the crumble ingredients until a uniform granulated texture obtained.
  4. Butter an 8 inch square mold. Spread half of the crumble at the bottom of the mold and press lightly using a spatula. Cover with date preparation. Sprinkle with the rest of the crumble and coconut.
  5. Bake for 30 to 35 minutes. Remove from oven and let cool.
