Ingredients

  • 1/3 chopped pistachios
  • For the caramel dates:
  • 1 1/2 cup pitted dates CEDAR
  • 1/3 cup maple syrup
  • 3 tbsp small butter cubes
  • For the brownie:
  • 1 cup orange juice
  • 1 cup pitted dates
  • 100 g of dark chocolate cut in small pieces
  • 1/2 cup softened butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 tbsp cacao
  • 1/2 cup all purpose flour
  • 1 tsp baking powder

Preparation

  1. Preheat the oven to 180 C
  2. In a saucepan, add the dates and maple syrup. Bring to a boil, then simmer for 2 to 3 minutes
  3. Transfer the preparation to the container of the electric mixer. Mix until smooth. Add in a few cubes of cold butter at a time and mix until homogeneous. Set aside
  4. For the brownie:
  5. In a saucepan, place the orange juice and dates. Cover and heat for 5 to 8 minutes over low heat, stirring occasionally, until compote is obtained
  6. Transfer the compote to the container of the cleaned electric mixer and mix until a puree is obtained
  7. In a water bath, melt the chocolate with the butter
  8. Using the electric mixer, whisk the eggs with the date puree, vanilla, cocoa, flour and baking powder in a large bowl until a creamy preparation is obtained. Gradually stir in the melted chocolate and whisk until homogeneous
  9. Butter a 20 cm mold, then pour half of the dough into it
  10. Bake for 7 minutes. Remove from oven and let cool
