Mortadella sandwich

Ingredients

  • 2 slices of sandwich bread (your favorite variety)
  • 2 teaspoons of light mayo
  • 2 teaspoons of dijon mustard or regular mustard
  • 3 to 4 slices of mortadella
  • ½ roasted red pepper
  • 2 to 3 slices tomatoes
  • 3 to 4 slices red onion
  • 5 to 6 pickles
  • baby arugula or lettuce
  • cheddar cheese or mozzarella cheese , sliced

Preparation

  1. Toast the bread. Spread the mayo on one slice and mustard on the other slice.
  2. Top one of the slices of bread with arugula, tomatoes, pickles, roasted red peppers, cheese, red onion and mortadella. Place the other slice of bread on top to form the sandwich. Enjoy!
