Baladi zucchini dip (Lib el Coussa)

  • 1-1/2 cups baldi zucchini
  • 1 medium chopped onion
  • 3 chopped garlic cloves
  • 1 tbsp olive oil
  • 1 tbsp grenadine syrup
  • 1 tsp dry mint


  1. In a skillet, heat the oil and add the onion, garlic and zucchini. Fry for 2 minutes
  2. Cover the pan and cook another 5 minutes on very low heat
  3. Add grenadine syrup and stir
  4. Remove from heat, add dried mint and serve with pita bread
