Mediterranean chickpea salad

Ingredients

  • 2 cups of zucchinis
  • 2 cucumbers
  • One can of chickpeas, drained and rinsed
  • One cup of cherry tomatoes, cut in half
  • Half a cup of red bell peppers
  • 2 Tbsp of chopped onions
  • Half a cup of crumbled feta cheese
  • Half a cup of kalamata or Lebanese olives
  • One tbsp of chopped fresh basil
  • One tbsp of chopped coriander
  • One glove of garlic, minced
  • One tsp of dried oregano or Italian herbs
  • Salt and pepper to taste
  • Olive oil to taste
  • Balsamic vinegar to taste

Preparation

  1. In a large bowl, add all the ingredients.
  2. Add the balsamic vinegar, the olive oil and mix well.
