Grilled vegetable and chickpeas bowl

  • 30 ml (2 tbsp) balsamic vinegar
  • 540ml Adonis chickpeas, rinsed and drained
  • 3 carrots cut into sticks
  • 1 small cauliflower cut into bouquets
  • 200g Feta cheese crumbled
  • 1 red onion, minced
  • 30 ml (2 tbsp.) Olive oil
  • 500ml (2 cups) arugula (optional)


  1. Preheat oven to 205 degrees C. (400F).
  2. In a bowl, combine the balsamic vinegar with chickpeas, carrots, cauliflower, onion and olive oil. Season with salt and freshly ground pepper.
  3. On a baking sheet lined with parchment paper, spread the chickpea mixture. Bake for 25 to 30 minutes, stirring halfway through cooking.
  4. If desired, divide the arugula between plates. Garnish with the chickpea mixture and sprinkle with feta.
