Grilled eggplant salad (El-Rahib)

  • 1 regular eggplant
  • 1 large tomato
  • 1 green pepper
  • 4 shallots
  • 5 radishes cut into rings
  • Chopped Italian parsley
  • A few chopped mint leaves
  • A chopped clove of garlic
  • Lemon juice, salt and olive oil to taste


  1. Put the eggplant on a baking sheet and grill on both sides.
  2. Take out the eggplant and put in cold water to cool.
  3. Remove the peel of the eggplant and dice it.
  4. Dice the tomato, the pepper and the shallots.
  5. Mix the chopped garlic with salt, lemon and olive oil.
  6. Add all the ingredients to a bowl and mix gently before serving.
