Avocados stuffed with tabouli

Ingredients

  • Cedar bulgur 180 ml (3/4 cup)
  • Chopped fresh parsley 60 ml (1/4 cup)
  • 2 small plum tomatoes, seeded and diced
  • Crumbled goat cheese 125 (1/2 cup)
  • 4 avocados
  • Fresh lemon juice 60 ml (1/4 cup)
  • Optional: chopped fresh mint 60 ml (1/4 cup)

Preparation

  1. Cook bulgur as directed on the package
  2. Ginning bulgur with a fork. Let cool
  3. In a bowl, mix the lemon juice with a little olive oil
  4. Add parsley, tomatoes, goat cheese, red onion, mint (optional). Season with salt and pepper
  5. Cut the avocados in half lengthwise and remove the cores
  6. Garnish each avocados with tabouli
