Gratinated oysters with chorizo and parmesan

Ingredients

  • 12 oysters
  • Coarse salt
  • 25 ml of chorizo cut into small dice
  • 45 ml of grated parmesan
  • 15 ml of chopped fresh chives

Preparation

  1. Preheat your oven on broil.
  2. Brush the oysters under cold water, then mop them up. Open the oysters and detach the top shell.
  3. To keep the oysters in place, cover a small baking tray in coarse salt, then place the oysters.
  4. Garnish the oysters with chorizo and parmezan. Bake in the oven for 1 to 2 minutes .Remove from oven and let it cool.
  5. When serving garnish the oysters with chives.
