The butcher's assistant is the butcher's right hand in carrying out the operational tasks of the department. He participates in the preparation of marinades and in the cutting of food. He respects food hygiene and safety standards as well as health and safety procedures and responds to the instructions of his immediate superior.

  • Monitor product quality and expiration dates;
  • Assist the butchers in the preparation of marinades;
  • Prepare carcasses for cutting operations;
  • Debone beef and poultry;
  • Use the different mincers to prepare the beef and pork meats;
  • Prepare the meats for the casing of the different kinds of sausages.
